Genuine Key Lime Pie Recipe - makes two 9-inch pies

This pie was intended to be made with genuine Florida fresh key limes.  They can be purchased at some major grocery stores like Publix, Winn Dixie, Giant Eagle or Pigley Wigley, depending on where you live.  Key lime pies are yellow in color NOT green. 

Preheat oven to 350F. 
Obtain the following ingredients:

juice from 12 large fully ripened key limes or 8 ounces of bottled lime juice for a reasonable facsimile. 
  • 2      14 oz cans of Borden Eagle Brand sweetened condensed milk
  • 6      large egg yolks (do not use the egg whites in this recipe)
  • 1/8   tsp vanilla extract
  • 2      9-inch Graham cracker or vanilla wafer pie shells
  • 1     medium tub of cool whip or equivalent
  • 1     dash of sea salt
  • 2     drops Angostura Bitters or 1 tsp Harvey's Bristol Cream sherry

mix all the ingredients except cool whip and pie shells (about 30 strokes of a stainless whip or 50 with a fork)
Pour half the mixture in each pie shell.  (There will be about 1/2-inch of room to top of each pie shell.  this is normal)
Bake the pies for exactly 12 minutes at 350F.

Cool the pies on wire rack

When pies are cooled to room temperature, spread cool whip or equivalent (some people prefer whipped cream) around the outer rim of each pie making a ring just wide enough to cover the exposed pie crust.  About 3/4 inch wide.  The pie is very rich so you probably do not want to add too much extra sweetness, unless you can handle it.

Refrigerate the pies for at least 1 hour (24 is better).  The remaining pie can be refrigerated up to 1 week and still be good.
